Chicken stuffed with spinach and roasted garlic

Roast a few cloves of garlic in a pre-heated oven for 20-30 minutes, until soft Remove and set aside.

Wilt some spinach in a frying pan. Remove and squeeze out the excess liquid.

Squeeze out the cloves of garlic and add to the spinach.

Butterfly out your chicken breast and pop a bit of your spinach mixture inside, fold the butter flied piece over, secure it with a cocktail stick and then roast, or wrap tightly in clingfilm and poach in water until cooked.

Serve with baby boiled potatoes and some salad.

Steak with creamed spinach

Remove the steak from the fridge and set aside for an hour to bring it to room temperature.

Finely slice a shallot or half a white onion. Soften in a little olive oil with a clove of garlic.

While this is happening, steam your spinach until cooked and set aside.

Grill your steak until cooked the way you like it and set aside to rest.

Add a sprinkle of flour to your onion and stir, cooking until the flour takes on a little colour. Add skimmed milk, a dash at a time, stirring to incorporate until the mixture is fairly loose.

Add some parmesan, season with pepper and a little salt and add to your spinach.

Serve alongside the steak with some baby boiled potatoes.
